Peek-A-Boo Eggs




I decided to perform CPR on a recipe that was near death in my recipe repertoire. I decided to revive a breakfast dish that I use to make when my children were small. I just jazzed it up a little. After all we all can use a little tune up from time to time. My family loved it and like the cobbler that I made this morning it was soooo easy. I crisped up the bread rounds to serve on the side. I had made bacon as well and so I used bacon grease along with the butter. And guys just so you all know. When I say butter. I MEAN BUTTER!! Not fat free margarine, not any kind of butter a-like-- BUTTER MEANS BUTTER.

F.Y.I. I was not able to post a photo of the blueberry cobbler after it was done because as soon as I pulled it out of the oven my daughter dug the center out with a gigantic spoon!!!! Need I say more??

Lazy Saturday Morning




Well, My computer has been acting crazy( more user than computer) so I am just making another entry. So far this morning I have made a blueberry cobbler(and it was delicious!) along with peek-a-boo eggs. The blueberry cobbler was so easy to make and called for such few ingredients that I was skeptic. It turned out to be wonderful. You can substitute any berry or fruit for that matter in the recipe. The recipe is as follows:
1/4 pound (1 stick) butter
1 1/4 cups + 2 Tbs sugar
1 cup self rising flour
1 cup milk
2 cups fresh ( or frozen ) blackberries, blueberries, peaches, raspberry's,and so on


1) preheat oven to 350
2) melt butter in microwave safe dish
3)in medium size bowl mix 1 cup of the sugar with the flour and milk
4)whisk in the melted butter
5)rinse fruit and pat dry
6)pour the batter into baking dish and sprinkle fruit evenly over batter
7)sprinkle 1/4 cup of sugar over top of berries
8)bake for 1 hour or until golden brown and bubbly. When you have 10 minutes remaining on your cooking time sprinkle the remaining 2 Tbsp of sugar over the top cook for the last 10 minutes and remove
9) next is the crucial part. This is the part that you can not do wrong!!! Scoop out a giant spoonful and pile on some vanilla ice cream and shove into your mouth while it is still warm. This is worth getting up in the morning for!

QUAKER’S True Delights

I got these at Wal-Mart the other night and they are just that—little delights. I was a little hesitant because the looked like rice cakes and rice cakes always remind me of packaging Styrofoam peanuts with no flavor and an indescribable texture. But these are really good. I got the blackberry pomegranate flavor and you can eat 13 for 110 calories and 3 grams of fiber so I think it is a good snack alternative. They have a sweet favor and great texture that is airy and crispy. I will try the other flavors as well because I am hook and if I decide to eat the whole bag it will only be about 660 calories but 2/3 of my daily fiber intake, ha-ha--Wendy

I don't know how many times Karen and I have called each other with a new recipe we just tried for our families. She and I are constantly exchanging recipes and cooking tips. We thought this would be a great way to share our recipes and tips to friends and family. O.K. I am charting into unknown territory! I am a boring pediatric nurse by day, and an exciting, daring homecook by night! My very best friend and I decided to take life by the horns (or casserole dish) and do something that neither one of us ever thought that we would do in a million years! START OUR OWN COOKING BLOG ! Wendy and I have both had a few trying years. We both find cooking so healing. So what better way to find peace, but to step outside our comfort zone and make a blog sharing our recipes and humor with all of you. I hope that all of you will find something here that will enrich your life in someway. Let me assure you though I am in no way a professional. I am totally self taught. I can hardly wait to get cooking!
