Lazy Saturday Morning




Well, My computer has been acting crazy( more user than computer) so I am just making another entry. So far this morning I have made a blueberry cobbler(and it was delicious!) along with peek-a-boo eggs. The blueberry cobbler was so easy to make and called for such few ingredients that I was skeptic. It turned out to be wonderful. You can substitute any berry or fruit for that matter in the recipe. The recipe is as follows:
1/4 pound (1 stick) butter
1 1/4 cups + 2 Tbs sugar
1 cup self rising flour
1 cup milk
2 cups fresh ( or frozen ) blackberries, blueberries, peaches, raspberry's,and so on


1) preheat oven to 350
2) melt butter in microwave safe dish
3)in medium size bowl mix 1 cup of the sugar with the flour and milk
4)whisk in the melted butter
5)rinse fruit and pat dry
6)pour the batter into baking dish and sprinkle fruit evenly over batter
7)sprinkle 1/4 cup of sugar over top of berries
8)bake for 1 hour or until golden brown and bubbly. When you have 10 minutes remaining on your cooking time sprinkle the remaining 2 Tbsp of sugar over the top cook for the last 10 minutes and remove
9) next is the crucial part. This is the part that you can not do wrong!!! Scoop out a giant spoonful and pile on some vanilla ice cream and shove into your mouth while it is still warm. This is worth getting up in the morning for!
